Recipe: Avocado Salad

Delicious for Any Meal

Here’s a yummy recipe – one of my FAVORITES! It’s fast, easy, satisfying, and don’t tell me it’s not pretty! I used to eat this for breakfast, yes breakfast, after a hard track workout. It’s a meal on it’s own or you can add a piece of whole grain bread. You could also make a smaller side salad portion. Packed with healthy stuff – vitamins, minerals, trace minerals, good fats, and fiber – it’s sure to satisfy.


Ingredients

  • 1 c Power Greens like Arugula, Spinach, Kale, Leaf Lettuce (optional)
  • 1/2 – 1 Avocado
  • 1/2 c Chopped Tomato
  • 1/3 c Chopped Bell Pepper – any color!
  • 1 – 2 T Chopped Onion (red is yummy…and pretty)
  • 1/8 c Raw Sunflower Seeds
  • Sprinkle of Salt
  • 1/2 c Grated Monterey Jack cheese
  • 1/2 c Grated Carrot
  • dried Dulse Flakes
  • 2 – 4 T Olive Oil
  • 1 T Apple Cider Vinegar (I like Braggs)

INSTRUCTIONS

Salad before cheese, carrot, dulse to show this one has cucumber

Layer the ingredients on a plate in the order listed above. Sometimes I like to put greens under the avocado like arugula, chopped kale, spinach or even green or red leaf lettuce. Chop the vegetables so they blend with one another and aren’t too chunky yet not so small that they get lost or turn to mush. Drizzle the olive oil and apple cider vinegar over the salad. Sit for a moment to take in the array of colors and feel the freshness before taking that first bite. Let me know what you think! I have yet to meet someone that isn’t amazed by both the flavor, beauty and fulfillment of this salad.
